Pat Marken has masterfully translated her love of Cajun food into a delightful food cart experience that you do not want to miss.

As you might guess, Gumbo is the specialty and she gets it right!

Ragin’s Cajun Gumbo is a brand new Portland Food Cart. Rod, with the a la carts Food Cart Pod moved them in on January 10th, 2012 and Pat had her grand opening 8 days later on January 18th. I was privileged to be present on both dates.

  

Where

Ragin’ Cajun Gumbo Food Cart is located at the a la cart Food Cart Pod located 50th and Division (Ivon St. actually, just one small block off of Division).  www.alacartspdx.com

  

This Portland Food Cart Pod has a great covered seating area that blocks out the rain in the winter and provides some shade in the Summer.

 

In the evening this pod, as well as the seating area is well lit. As an added bonus, in the winter this pod is has some heat.

As of the time of this review being published ( January 2012) Current Winter hours are 11:00 AM – 7:00 PM Wednesday Through Saturday.

The Food!

Time for the best part!  Pictures and comments about what I actually ate.

FYI – I did not eat all of this at once. I visit the Food Carts I recommend, a number of times to look for consistency. It’s one thing to serve good food once, it is quite another to serve great food every time.

    

Chicken and Sausage Gumbo. This Gumbo is the Bombdiggity! Great flavor. Truly “Mot” watering!

  

T-Belle Potatoes. Red potatoes have never been so happy. A perfect accompaniment to brother gumbo. Order then together. Your taste buds will rejoice.

 

Red Beans and Brown Rice. Sometimes when you get Beans and Rice , they skimp on the beans and you get a bowl that is weighted toward the rice. Not here. LOTS OF YUMMY BEANS. You definitely get your money’s worth at Ragin’ Cajun.

  

Smothered Sweet Heat Cabbage.

Growing up, Pat went to a favorite restaurant in Baton Rouge that served this cabbage dish. This is her take on it. I really enjoyed it. I have never had anything quite like it.

For now, four delicious items on the regular menu.

However, Pat has recently made a special dish for Saturdays – Chicken Lafayette. Chicken, shrimp, and tasso in a cream sauce over brown rice.

Also rumor has it that soon you will be able to get Ragin’ Mac and Cheese… stay tuned. This Great Portland Food Cart is just getting started.
